- Preheat Oven to 500 Degrees (Approx. 20 Minutes)
- Lightly Coat Meat with Oil
- Place Meat on Broiler Rack in Preheated Oven for 20 Min
- Without Opening Oven Door, Reduce heat to 200 Degrees
- Slow Roast for Approx. 25 Minutes Per Pound
- Use Meat Thermometer to Bring to Desired Temp (see Chart below)
- Let Roast Stand for 15-20 Minutes Before Carving
